I have been on a cornmeal kick for the past few days, so we decided to try out this recipe. Mix ½ cup cornmeal with 1 ¼ cups buttermilk, then set aside. Separately, puree 2 cups corn kernels in a food processor, then add 2 eggs and 2 Tbsp butter (melted but not hot) and mix well. Add the… Continue reading Sweet corn flapjacks

Banana-egg pancakes (gluten free)
I finally tried this recipe from Briana, and it was tasty. Mix 2 ripe bananas with 2 eggs, then add a dash each cinnamon and nutmeg. Using a nonstick pan, heat a little almond oil, then ladle out one pancake’s worth of batter. Cook until browned on each side, and continue until you use up… Continue reading Banana-egg pancakes (gluten free)
French toast
We used this recipe: http://www.epicurious.com/recipes/food/views/French-Toast-40039 but also added a dash of cinnamon. Daniel prepared the egg mixture. We love ciabatta bread for this dish. (Jan. 2015)
Sweet oven-baked grits and millet with pecans, maple syrup, and honey
Recipe is here: http://mobile.nytimes.com/2014/03/13/health/sweet-oven-baked-grits-and-millet-with-pecans-and-maple-syrup.html?referrer (Mar. 2015) Note: The photo shows our modification: we swapped out medium-grain cornmeal for the grits and amaranth for the millet. We also garnished with walnuts instead of pecans. The result was less solid than the original recipe, but still delicious. (Nov. 2016)
Old-fashioned cornmeal mush with fresh blueberries
Recipe is here: http://ansonmills.com/recipes/475 . We recommend reducing the amount of salt to just 1/8 tsp (the recipe calls for 1 tsp). We also fold the hot milk (we use 1 or 2%, not whole) into the pot, rather than serving it on the side. (Mar. 2015)
Broccoli and portobello frittata with Yukon potato crust
This recipe was inspired by a delicious frittata that my friend Leah shared with me last week. I will try to post the recipe later. (Mar. 2015)

Stir 1 2/3 cup flour, 1/3 cup blue cornmeal, ½ tsp salt, 1 Tbsp baking powder, and ½ tsp baking soda in a small bowl and set aside. In a separate bowl, cream together 1/3… Continue reading Blueberry corn muffins
