Italian tomato frittata (frittata de pomodoro)

We had cherry tomatoes, fresh basil, and hard cheese on hand, so we tried this recipe: https://memoriediangelina.com/2024/08/08/frittata-al-pomodoro-tomato-frittata/. Our modifications: first, we halved the recipe (1 garlic clove, 4 eggs, 10 cherry tomatoes, and 2 Tbsp fresh basil). We discarded the garlic clove after browning it (we didn’t see a later use for it in the…… Continue reading Italian tomato frittata (frittata de pomodoro)

Korean scallion and egg fried rice (bokkeum bap)

We had a craving for a mildly seasoned fried rice, so we tried this: https://www.koreanbapsang.com/egg-fried-rice-gyeran-bokkeumbap/ We found this recipe simple to make and delicious. It was reminiscent of chaufa blanco, a Chinese-Peruvian fried rice tossed with egg white, asparagus, and toasted sesame oil. Our only modification was to add 1/2 cup frozen peas. This was…… Continue reading Korean scallion and egg fried rice (bokkeum bap)

Kimchi fried rice with omelette (omurice)

We threw together this dish on a whim, drawing from multiple sources and utilizing our pantry. First, we made jasmine rice in our rice cooker, enough to yield 3 cups cooked rice. Second, using a large nonstick pan, we heated 2 Tbsp unsalted butter on medium and then added 1.5 cups kimchi (reserving kimchi liquid).…… Continue reading Kimchi fried rice with omelette (omurice)

Scrambled egg and roasted vegetable burrito

This was an ad hoc recipe that we tossed together based on our pantry: 1. Preheat oven to 425. Line two quarter sheetpans with foil, then spray foil surface lightly with neutral veg oil (e.g., canola). On the side, prepare the spice blend in a small prep bowl: 3/4 tsp smoked paprika, 1/8 (or less)…… Continue reading Scrambled egg and roasted vegetable burrito

Chinese scallion egg wrap

We tried this quick recipe for lunch, and it was delicious, unique, and satisfying: https://cooking.nytimes.com/recipes/1019522-scallion-egg-wrap?smid=ck-recipe-iOS-share Our modifications: we used 1 Tbsp pickled daikon (Spicy King brand salted spicy radish, Hunan flavor, rinsed thoroughly and patted dry) instead of pickled mustard leaves. This was like an omelette sandwich. (Mar. 2023)

Beet greens and rice casserole

To make use of a bounty of fresh beet greens, we made this NYT recipe: https://cooking.nytimes.com/recipes/1014672-beet-greens-and-rice-gratin?smid=ck-recipe-iOS-share We used about 4 cups of beet stems (diced) and leaves (julienned), which we had thoroughly cleaned (several rinses of water) and dried. Our modifications: first, we did not blanch the beet greens separately. Second, we substituted 2 small… Continue reading Beet greens and rice casserole

Cheesy corn omelet

We tried this recipe from Payel of Cookwithme24x7: https://youtu.be/atqAyJ-dTsM It’s a video in a non-English language, so the directions are based on English subtitles. First, in a mixing bowl, using a fork lightly whisk 3 large eggs and a dash each of salt and black pepper. Add ½ cup low-fat milk, then 1 small minced… Continue reading Cheesy corn omelet
