We tried this recipe:http://www.daringgourmet.com/2013/08/27/doro-wat-spicy-ethiopian-chicken-stew/ but made a few modifications. First, instead of 7 Tbsp unsalted butter, we used a mix of butter, olive oil, and grapeseed oil (6 Tbsp total, reduced from 7). Second, we used one large red onion and sliced in along the grain. Third, we used 10 skin-on, bone-in drumsticks in lieu… Continue reading Ethiopian berbere chicken stew with hard-boiled eggs (doro wat)

Creamy scrambled eggs with cottage cheese
We had leftover small-curd cottage cheese, so we tried this recipe: http://thedairydish.com/easy-scrambled-eggs-cottage-cheese-recipe/ The recipe wasn’t particularly precise, so we heated the butter in the pan first, then scrambled the eggs before adding them to the pan. We garnished with minced garlic chives. We served this with sliced tomatoes drizzled with olive oil, fruit-infused white balsamic… Continue reading Creamy scrambled eggs with cottage cheese
Browned onion kugel
We made this savory version of kugel to prepare for Rosh Hashanah. Details here: http://www.epicurious.com/recipes/food/views/browned-onion-kugels-231507 Instead of dicing the onions, we cut them into ¼ inch vertical slices along the grain. This recipe yielded 12 large muffins and 1 mini-loaf.
Bacon, arugula, and Gruyere bread pudding
We tried this recipe for 2/3 of a leftover ciabatta loaf: http://www.epicurious.com/recipes/food/views/arugula-bacon-and-gruyere-bread-pudding-350898 We baked for an additional 10 mins and broiled it on high for 2 mins for browning. (Sept. 2016)
Baked egg in avocado with simple salsa
We tried this baked egg recipe from Laura Vitalo: https://m.youtube.com/watch?v=dCUF6Q99o9w Preheat the oven to 425 and bake for 15 mins (runny yolk) to 20 mins (fully cooked yolk). We did not have hot sauce on hand, so we whipped up a simple salsa similar to this online recipe: http://www.food.com/recipe/simple-salsa-128822, except that we used ½ tomato,… Continue reading Baked egg in avocado with simple salsa
Sage and butternut squash frittata
We tried this recipe: http://cookieandkate.com/2014/butternut-squash-frittata-with-fried-sage/. Instead of frying the sage, we added 2/3 of fresh, julienned sage to the frittata mixture before baking and saved the remaining 1/3 for garnish. We served the frittata with a simple salad and bacon strips. (May 2016)
Italian eggs in purgatory
We had half a baguette leftover, so I tried using it in lieu of Italian bread. Turns out a baguette is too narrow to nest an egg. To make the sauce, heat a small pot and add 1 tsp olive oil. Sauté 1 minced shallot; when fragrant, add a few cloves minced garlic and 1… Continue reading Italian eggs in purgatory
Huevos in a hole
We tried this recipe from the Pioneer Woman, except that we used leftover flour (instead of corn) tortillas: http://thepioneerwoman.com/cooking/huevo-in-the-hole/. Very tasty, but be warned that the tortillas can burn easily in butter, so keep your burner on medium (or lower) heat. (Apr. 2016)
Vietnamese kohlrabi stir-fried with garlic and egg (su hao xao toi)
I tried this simple, delicious recipe from Andrea Nguyen: http://www.vietworldkitchen.com/blog/2010/07/kohlrabi-stirfried-with-garlic-and-egg-recipe-su-hao-xao-toi.html. I also followed her suggestion of adding 2 tsp dried shrimp to the onion-garlic mixture. (Mar. 2016) Source: Andrea Nguyen, author and teacher, Vietworldkitchen.com.
Pan-seared spam and scrambled eggs over rice
We had two slices of spam leftover from making spam musubi, so we tried this quick and easy recipe: http://eatingrichly.com/spam-eggs-and-rice/. Because spam already is salty, we reduced the amount of soy and fish sauce in the marinade to 1 Tsp and 1 tsp, respectively. We did not add salt or pepper to the egg mixture.… Continue reading Pan-seared spam and scrambled eggs over rice
