We wanted to try a new porridge. We tried this recipe, but it turned out not to be soupy at all: https://www.onegreenplanet.org/vegan-recipe/pongal-south-indian-rice-lentil-porridge-vegan/ Its texture is more like the mung bean filling of Korean sweet rice cake (dduk). The flavors are nice, and it is tasty as a drier rice and mung bean dish. This recipe… Continue reading South Indian legume and rice dry porridge (pongal)

Kichidi (Indian savory rice and legume porridge), version 2 and our favorite recipe
After a few days of heavy, rich meals, we made this masala kichidi recipe to cleanse a bit: https://www.funfoodfrolic.com/masala-khichdi-recipe/ This is our favorite kichidi recipe to date. Our modifications: first, we used 1/2 cup white jasmine rice and 1/4 cup pink masoor dal (i.e., red lentil), soaked in water for 15 mins; and 1/4 cup… Continue reading Kichidi (Indian savory rice and legume porridge), version 2 and our favorite recipe
Korean spicy fish and radish stew (maeuntang)
We had a lot of daikon, and I suddenly had a craving for this dish. We tried Maangchi’s recipe: https://www.maangchi.com/recipe/maeuntang We followed Maangchi’s guidance to use fresh whole fish. We found two beautiful red snapper, which the fish monger graciously cut into 2-inch pieces (and we kept the head and tail). Our modifications: first, for…… Continue reading Korean spicy fish and radish stew (maeuntang)
Vietnamese daikon, tofu, and chayote soup (canh bau)
We had daikon, firm tofu, and chayote squash on hand, so we tried this plant-forward recipe: https://web.archive.org/web/20240521065002/https://viceatsworld.com/vietnamese-canh-bau-opo-squash-soup/. Its flavors are surprisingly complex and delicious, and the soup comes together very quickly. It makes a great weeknight meal. Our modifications: first, we often use chayote squash in lieu of opo squash (aka bottle gourd). They are… Continue reading Vietnamese daikon, tofu, and chayote soup (canh bau)
Cucumber dill salad
We recently hosted a brunch featuring heavily seasoned dishes (kedgeree and Jamaican jerk chicken). We wanted a refreshing, minimally seasoned healthy side dish to complement these flavors, so we made this: https://www.simplyrecipes.com/recipes/cucumber_salad/. We used 6 Persian cucumbers (diced, skin on), 2 Tbsp chopped fresh dill, 3 Tbsp Marukan rice vinegar (green label), and a dash…… Continue reading Cucumber dill salad
Indian dal with beet greens
We had a few bunches of fresh beet greens leftover from making a beet (root) recipe for Thanksgiving. We decided to try this recipe: https://www.spiceupthecurry.com/beet-greens-dal/ For the moong dal, we used 1/2 cup split yellow peas. We found this recipe decent, but not outstanding. The beet greens involved multiple rinses of water to flush out… Continue reading Indian dal with beet greens
Samosa-stuffed poblanos
We received three homegrown poblanos and loosely followed this creative recipe: https://www.acouplecooks.com/samosa-stuffed-poblano-peppers/ We halved the recipe amounts but still had ample filling for three petite poblanos and 1 small bell pepper. We made significant modifications for our 1/2 recipe: first, for the potato, we used 5 small-medium yukons (about 3/4 lb), peeled, quartered, and boiled… Continue reading Samosa-stuffed poblanos
Persian eggplant and split yellow pea stew (khoresh bademjan)
We were searching for a plant-forward version of one of our favorite Persian stews, khoresh gheymeh (beef and split yellow pea stew), and we tried this vegetarian dish: https://persianmama.com/vegetarian-khoresh-bademjan/. First, we couldn't find Italian or Japanese eggplant, so we used two medium globe eggplants. We followed the author's instructions on baking eggplant: https://persianmama.com/baked-eggplant/ We peeled… Continue reading Persian eggplant and split yellow pea stew (khoresh bademjan)
Simple fig freezer jam
We had about 16 fresh figs left from our friends’ harvest, so we tried this recipe: https://goodiegodmother.com/fresh-fig-freezer-jam/ We used 1/3 c honey as the sweetener. We also found that we needed to simmer the mixture longer (about 45 mins) to reduce to the right texture. (Sept. 2022)
Roasted cauliflower and farro salad
We wanted to make a hearty vegetarian dish for a potluck, so we tried this recipe from Cookie & Kate: https://cookieandkate.com/roasted-cauliflower-and-farro-salad-with-feta-and-avocado/ Our modifications: first, we omitted the feta. Second, instead of uncooked greens, we added about 2 cups of blanched kale (torn into bite-sized pieces prior to blanching, then rinsed in cold water and squeezed…… Continue reading Roasted cauliflower and farro salad
