Italian-style pasta with roasted eggplant and crispy garlic

We tried this recipe from Aida Mollenkamp: http://saltandwind.com/recipes/38-late-summer-roasted-eggplant-pasta-recipe. Our modifications: to avoid having unused ingredients, we increased the spaghetti to 1 lb (16 oz), tomato purée to 20 oz, balsamic vinegar to 1 ½ Tbsp, and sugar (we used white sugar) to 1 ½ tsp. We also used a mix of fresh thyme and fresh… Continue reading Italian-style pasta with roasted eggplant and crispy garlic

Oven-baked sweet plantains

We used extremely ripe plantains for this preparation. This is our favorite baked plantain recipe. We seasoned lightly with salt before placing the baking sheet in the oven. We also followed the suggestion to broil the plantains towards the end for added caramelization. http://www.natashalh.com/oven-baked-sweet-plantains-healthier-platanos-maduros/ (Apr. 2016) We typically used canola oil to coat the plantain… Continue reading Oven-baked sweet plantains

Oven-roasted shishito peppers

When I spotted fresh shishito peppers at H-Mart, I couldn’t resist trying them at home. We tried Michael Symon’s recipe from The Chew: https://abc.go.com/shows/the-chew/recipes/roasted-shishito-peppers-michael-symon Preheat the oven to 500. Trim the pepper stems slightly (¼ inch) to reduce the risk of them getting burnt and puncture the bottom of each pepper with a needle to… Continue reading Oven-roasted shishito peppers

Roast turkey

We followed Ina Garten’s Perfect Roast Turkey recipe, the version that included roast vegetables: http://www.foodnetwork.com/recipes/ina-garten/perfect-roast-turkey-recipe2.html. For a 14 lb turkey, we made the following modifications: first, for the first part of cooking, we placed the turkey breast side down to increase the likelihood the breast would not dry out. Also, instead of adding two sliced… Continue reading Roast turkey

Cast iron roast chicken with small potatoes

This is a recipe from the new Smitten Kitchen cookbook. Although I own the cookbook, I found the recipe online here: http://www.pink-parsley.com/2013/10/flat-roasted-chicken-with-tiny-potatoes.html?m=1. We removed the spine from this chicken and tried to cook it flattened, but our 12" cast iron skillet was a bit small for a 3 ½ lb chicken. (Oct. 2015)
