We tried this NYT recipe, with modifications: https://cooking.nytimes.com/recipes/1017170-cauliflower-parmesan First, instead of dredging the cauliflower in egg and breadcrumbs and deep frying it, we oven-roasted the cauliflower florets (tossed in a little olive oil and sprinkled with a little salt and pepper) at 425 for 30 mins, tossing midway. Second, to mimic the breading, we lightly… Continue reading Cauliflower parmesan

Weber’s garlic-sriracha chicken
We learned about this shortcut recipe from my friend Andrea: For 9 pieces of chicken (here, 3 boneless skinless breasts cut in half widthwise and 6 skin-on, bone-in drumsticks), marinate in 1 ½ Tbsp Weber garlic-sriracha seasoning (a dry seasoning) and 2 tsp 2% plain yogurt (we used Greek), making sure the seasoning and yogurt… Continue reading Weber’s garlic-sriracha chicken
Fire-roasted tomatoes, broiler version
We tried this method for a recipe that called for 28 oz canned fire-roasted tomatoes: https://www.thekitchn.com/quick-tip-roasting-tomatoes-un-59853 We lined our rimmed baking sheet with foil. To maximize exposure to the flames in our gas oven broiler, we cut our Roma tomatoes in half lengthwise. For 28 oz canned, we substituted with 1 ½ lb Roma tomatoes… Continue reading Fire-roasted tomatoes, broiler version
Oven-roasted trimmed artichokes
We trimmed large artichokes for a NYT recipe that we posted here: http://piglettedc.tumblr.com/post/175450786271/bulgar-and-chick-pea-salad-with-oven-roasted This post pertains to method. We generally followed this Gourmet video on how to trim artichokes: https://youtu.be/5o6AaCs4sAw Our modifications: first, we used a large mixing bowl filled with water and the juice of 1 ½ large fresh lemons. Second, we found the… Continue reading Oven-roasted trimmed artichokes
Bulgar and chickpea salad with oven-roasted trimmed artichokes
We tried this NYT recipe: https://cooking.nytimes.com/recipes/1016221-bulgur-and-chickpea-salad-with-roasted-artichokes First, for detailed instructions on trimming and roasting artichokes, see this method post: http://piglettedc.tumblr.com/post/175450614661/oven-roasted-trimmed-artichokes-we-trimmed-large Second, we modified this NYT recipe by reducing the amount of salt to barely ½ tsp total and using no-salt canned chick peas. We also used 1 Tbsp dried chives instead of 2 Tbsp fresh… Continue reading Bulgar and chickpea salad with oven-roasted trimmed artichokes
Sheet-pan mustard crusted chicken with broccolini and roasted sweet potatoes
We tried this NYT recipe: https://cooking.nytimes.com/recipes/1016020-sheet-pan-supper We simplified this recipe by oven-roasting two whole sweet potatoes instead of cutting and inserting thyme, using this recipe: http://piglettedc.tumblr.com/post/114603785616/oven-roasted-korean-sweet-potato-gogoma. We also omitted the mustard-sour cream sauce. Finally, we used broccolini instead of broccoli raab. (June 2018)
Japanese mixed mushroom yaki in foil pockets
We tried this recipe: https://www.saveur.com/mushroom-foil-yaki-recipe We used a mix of fresh bonapi, enoki, and shiitake mushrooms (totaling approx. 12 oz). To reduce sodium, we did not adjust the amount of seasonings for triple the mushrooms; we used only 2 Tbsp each soy and sake and 1 Tbsp white miso. We increased the butter to 2… Continue reading Japanese mixed mushroom yaki in foil pockets
Japanese salt-cured salmon (shiozake)
We tried this recipe: https://www.japanesecooking101.com/shiozake-recipe/ We dry-salted the salmon (about ¾ tsp per 1-inch thick filet) overnight. (For a 1.5 lb salmon filet, we cut about 4 ½ pieces.) Because we did not a grill, we used the oven. We first lined a baking sheet with foil, then placed a wire rack on top of… Continue reading Japanese salt-cured salmon (shiozake)
Sheet pan lemon rosemary butter chicken thighs with Korean sweet potatoes
We converted this Pioneer Woman whole roast chicken recipe into a weeknight meal: http://piglettedc.tumblr.com/post/159735500171/roast-chicken-coated-with-lemon-rosemary-butter Our weeknight modifications: first, preheat oven to 425 and spray a baking sheet with oil. Second, cut 4 small (or 2 medium) Korean sweet potatoes into 2x3” chunks (keeping skin on), slice 1-2 shallots into 1/2” slices along the grain (see… Continue reading Sheet pan lemon rosemary butter chicken thighs with Korean sweet potatoes
Oven-roasted breakfast potatoes
We followed this recipe: https://www.tasteslovely.com/perfect-roasted-potatoes/ We used three small-medium Idaho potatoes, and we scrubbed the skin. Our modification: we added a dash (about ½ tsp) each cumin powder and paprika to the cubed potatoes before roasting them. The tips on preheating the baking sheet and using parchment paper were key.
