We made this recipe: https://www.averiecooks.com/easy-30-minute-homemade-chicken-noodle-soup/ Our modifications: first, after removing the rotisserie meat from the bones, we sauteed the bones and skin in 2 tsp unsalted butter in a large Dutch oven for 5 mins on medium heat. We then discarded the skin and bones. We added another tsp butter and 1 tsp olive oil,… Continue reading Rotisserie chicken noodle soup

Rotisserie chicken lemon soup
We loosely followed this recipe: https://www.spendwithpennies.com/greek-lemon-chicken-soup/. Our modifications: first, we used ½ rotisserie chicken, which we separated into meat and bones/skin. We sauteed the bones and skin, then removed them before sauteeing the vegetables. Second, we used 1 cup ditalini instead of orzo. Third, for herbs, we used a bay leaf, ½ tsp dried thyme,… Continue reading Rotisserie chicken lemon soup
Chicken taco soup
Details here: https://www.thekitchn.com/recipe-chicken-taco-soup-248133 We used shredded meat from 1/3 rotisserie chicken. Despite its generous seasonings, we found the soup flat. We supplemented with a dash of Worchestershire sauce, soy sauce, and white wine vinegar. We found that freshly squeezed lime juice and a sprinkle of cilantro added brightness. We served with tortilla chips. (Jan. 2021)
Rotisserie chicken matzoh ball soup
We felt inspired by this shortcut recipe: https://www.whiskedaway.co/blog/2015/10/05/jewish-grandma-approved-matzo-ball-soup Our modifications: first, instead of using matzoh ball mix, we followed Joan Nathan’s recipe for matzoh balls, which is: in a medium mixing bowl, combine 4 eggs with ¼ cup schmaltz (we used olive oil instead), then stir in 1 cup matzoh meal and ½ tsp salt… Continue reading Rotisserie chicken matzoh ball soup
Simple rotisserie chicken and pasta soup

We used ½ a rotisserie chicken, from which we separated the meat from the carcass, loose bones, and skin. First, dice 2 to 3 celery stalks, 1 large carrot, and 1 medium onion. Second, heat 1 Tbsp olive… Continue reading Simple rotisserie chicken and pasta soup
Quick rotisserie chicken and rice soup
We had half a rotisserie chicken leftover (about 2.5 lb), so we tried this quick and easy recipe: https://www.backtothebooknutrition.com/rotisserie-chicken-rice-soup/ Our modifications: first, we added 6 baby skin-on Yukon potatoes, cut into bite-sized pieces (4 pieces per potato) at the same time as the carrots. Second, for the liquid, we used 8 cups chicken stock (half… Continue reading Quick rotisserie chicken and rice soup
Roasted parsnips and fennel with store-bought rotisserie chicken
This vacation inspired a semi-homemade cooking moment for me. Preheat oven to 400. Peel 3 parsnips and cut into wedges. Trim fennel bulb and cut into thick slices. Spray a baking pan with cooking oil, then spread the parsnips and fennel in a single layer, if possible. Season lightly with salt, black pepper, and another spray of oil. Let… Continue reading Roasted parsnips and fennel with store-bought rotisserie chicken
Brazilian chicken and rice soup with hearts of palm
Heat 1-2 tsp oil in a stock pot, then add 1 diced onion, 2 cloves minced garlic, 2 serranos and 2 jalapenos (seeded and sliced), 1 tsp allspice, and ½ tsp cayenne pepper. When fragrant, add ½ cup uncooked long-grain white rice, 9-10 cups chicken stock, and 13 oz can of coconut milk (here, I used light). Bring to… Continue reading Brazilian chicken and rice soup with hearts of palm
