Simple applesauce

Peel, core, and slice (into ¼ inch thickness) 6 large apples (preferably a mix of sweet and tart varieties), and place in a large Dutch oven. Add ½ cup apple cider, juice, or water (here, apple cider) and ½ tsp cinnamon. Cover and simmer until apples are mashable with a spoon (about 20 mins).
