
We recently had a deliciously refreshing salad at a Korean-Japanese restaurant called Maru. I found the dressing addictive and tried to recreate it with this recipe: https://www.justonecookbook.com/wafu-dressing-japanese-salad-dressing/
Our modification: for the onion, we used a small shallot grated on a large-hole grater. (May 2026)
