We followed this recipe for both chicken and sauce: http://runawayapricot.com/2015/01/healthier-peruvian-chicken-skewers-with-green-sauce.html/. In case the link does not work: First, the night before, cut 3 ½ lb boneless skinless chicken breasts (about 4 breasts) into 1” chunks. Marinate the chicken chunks in: 2 Tbsp ground cumin, 2 Tbsp sweet paprika, 4 tsp (we reduced to 2 tsp)… Continue reading Peruvian-style chicken kabob with cilantro-jalapeño (aji verde) sauce

Chinese-style lettuce wraps with minced chicken, tofu, and shiitakes
We tried this recipe from Andrea Nguyen: http://www.vietworldkitchen.com/blog/2012/08/chicken-tofu-and-shiitake-lettuce-cups-recipe.html. We used 6 oz chopped water chestnuts in lieu of pine nuts as well as five fresh shiitakes instead of two dry. We also used romaine lettuce instead of iceberg. Korean puréed soybean stew with kimchi and pork, Maangchi version (kong beejee jigae)
This is a favorite dish from my childhood. I tried Maangchi’s version, and it is delicious: http://www.maangchi.com/recipe/kongbiji-jjigae. I have adapted elements of Maangchi’s recipe to my family’s recipe: https://piglettedc.wordpress.com/2015/03/25/korean-pureed-soybean-stew-with-kimchi-and-pork-2/ First, I increased the dry soybeans from ½ cup to 2 cups, then soaked overnight in the fridge. I used 2 large bone-in pork chops (about… Continue reading Korean puréed soybean stew with kimchi and pork, Maangchi version (kong beejee jigae)
Vietnamese kohlrabi stir-fried with garlic and egg (su hao xao toi)

Smoked turkey and andouille sausage gumbo
This is a seafood-free and okra-free gumbo recipe from Saveur: http://www.saveur.com/article/recipes/smoked-turkey-and-andouille-gumbo?TmFudDKk9Up4CvyI.03. This recipe has quite a kick, so you may want to reduce the amount of cayenne or white pepper. (Feb. 2016). Note: We followed this recipe except that we made microwave roux to save time: http://www.deepsouthdish.com/2010/03/10-minute-microwave-general-purpose.html?m=1. We used a 2 quart covered round baking… Continue reading Smoked turkey and andouille sausage gumbo
Vegetable pasta soup
This is a simple chicken broth-based soup recipe from Food Network. It calls for orzo or any small pasta; we used ditalini. This easily can be vegetarian if you use vegetable broth in lieu of chicken broth. We also added a dash of crushed red pepper, bay leaf, 3 sprigs thyme, 1 tsp dill, 3… Continue reading Vegetable pasta soup
Spinach, rice, and cheese casserole
We had leftover cooked rice and a lot of frozen spinach, so we decided to try this recipe. We used shallots instead of onion (see Note 2 below) and added a dash of marash pepper for a little heat. We also used haiga (Japanese medium-grain) rice. After baking in a buttered 2 quart baking dish… Continue reading Spinach, rice, and cheese casserole
Savory tomato and string bean baklava
Chef Maria Elia's recipe has Greek notes like fresh dill, cinnamon, feta, and honey. Recipe here: http://www.foodrepublic.com/recipes/tomato-and-string-bean-baklava-recipe/. Our only modification is instead of 2 tsp cinnamon, we used 1 tsp each cinnamon and nutmeg. We also had to bake it 20 mins longer and at a higher temperature (we raised it to 375/400 for the… Continue reading Savory tomato and string bean baklava
Mashed sweet potatoes
This is another recipe from my childhood, one that we learned from a family friend, Yvonne Francis, who hosted us at her Cranston, RI home for a memorable Thanksgiving when I was in elementary school. Using a stockpot, bring about 12 cups of water to a boil, adding a little (about 1 tsp) salt. To… Continue reading Mashed sweet potatoes
Uncle Tun’s grilled soy-marinated salmon
I learned this recipe from Waimar and her father. Marinate four salmon fillets (about 24 oz) in approximately ¼ cup low sodium soy sauce, 1/3 cup mirin, 2 tsp honey, and 1 tsp black pepper for about 30 mins. (Oct. 2015) Note: I did not measure the marinade ingredients, so these measurements are approximate. Grill… Continue reading Uncle Tun’s grilled soy-marinated salmon
