Simple pound cake
We tried this Ina Garten recipe: http://www.foodnetwork.com/recipes/ina-garten/plain-pound-cake-recipe.html but reduced the sugar to 1 ¾ cups and salt to ¾ tsp. This recipe yields 2 regular loaves, or 1 regular loaf and 3 mini-loaves (one of which is depicted). Fill the loaves only ½ way, as the batter expands while baking. We served the frittata with a simple salad and bacon strips. (May 2016)
Mexican-style cinnamon sugar tortilla chips
We had leftover flour tortillas, so we tried out this recipe, which is a healthier version of buenelos: http://www.spiciefoodie.com/2012/05/04/healthy-cinnamon-sugar-chips/. However, instead of tossing the oiled, baked chips in cinnamon sugar, we tossed pieces a little vegetable oil, then added the cinnamon-sugar mixture to coat the pieces before baking. We also sprinkled extra cinnamon sugar on… Continue reading Mexican-style cinnamon sugar tortilla chips
Italian-style lemon polenta cake
We tried this almond and corn meal recipe from Nigella Lawson: http://www.foodnetwork.com/recipes/nigella-lawson/lemon-polenta-cake-recipe.html. The lemon glaze is a nice touch. Our cake was a little grainy due to the cornmeal texture; we recommend using a fine-grain meal. (Mar. 2016)
