Chicken taco soup
Details here: https://www.thekitchn.com/recipe-chicken-taco-soup-248133 We used shredded meat from 1/3 rotisserie chicken. Despite its generous seasonings, we found the soup flat. We supplemented with a dash of Worchestershire sauce, soy sauce, and white wine vinegar. We found that freshly squeezed lime juice and a sprinkle of cilantro added brightness. We served with tortilla chips. (Jan. 2021)

Spanish-style chicken and rice
This was a good use of 2 cups leftover cooked basmati rice. We tried this one-skillet recipe: https://www.thekitchn.com/spanish-style-chicken-rice-skillet-recipe-23024698 Our modifications: in lieu of one small red bell pepper, we used 4 oz diced green beans and 1 diced jalapeño. For the 1 lb chicken, we used 2 boneless chicken breasts. (Dec. 2020)
Sauteed rotisserie chicken with Middle Eastern flavors
We had about 3 cups of rotisserie chicken leftover (mainly bits of breast, backmeat, 2 thighs, and a wing). Loose instructions: first, remove meat from carcass, handshredding into bite-sized pieces. Add the shredded chicken, then add 3 Tbsp slivered… Continue reading Sauteed rotisserie chicken with Middle Eastern flavors

Chinese cabbage stirfry with bacon and chicken
We tried this recipe: https://thewoksoflife.com/chinese-cabbage-stir-fry/ Our modifications: first, for the protein we sauteed bacon (about 2 strips) cut into matchsticks, and then once the bacon rendered a bit, we added one boneless chicken breast, cut into ½" thick slices (each piece about 2x2"). Second, we hand-tore ½ small head of red cabbage. This dish was… Continue reading Chinese cabbage stirfry with bacon and chicken
Simple rotisserie chicken and pasta soup
We did not follow a specific recipe this time, but we threw this together following our instincts. We used ½ a rotisserie chicken, from which we separated the meat from the carcass, loose bones, and skin. First, dice 2 to 3 celery stalks, 1 large carrot, and 1 medium onion. Second, heat 1 Tbsp olive… Continue reading Simple rotisserie chicken and pasta soup
Open-faced rotisserie chicken sandwich with homemade gravy
This was a good use of ¼ rotisserie chicken (2 skin on, bone-in thighs, the back, and a wing) that we had leftover. We made gravy following this recipe: https://tastesbetterfromscratch.com/chicken-gravy/ Our modifications: Because we did not have any drippings, I browned the bones (with some meat attached) and skin with about 1 Tbsp vegetable oil… Continue reading Open-faced rotisserie chicken sandwich with homemade gravy
Oven-roasted chicken drumsticks with mushrooms, shallots, and garlic
We tossed this together while on vacation. First, preheat oven to 425. Wash, drain, and pat dry 8 oz cremini mushrooms, then trim and cut into ½" slices. Place sliced mushrooms in a medium bowl, add 2 sliced shallots, and 2 minced garlic cloves. Toss with 1 Tbsp neutral vegetable oil, then lightly season with… Continue reading Oven-roasted chicken drumsticks with mushrooms, shallots, and garlic
