We tried this recipe, which uses a boxed mix: https://savoringtoday.com/ghirardelli-brownie-mix-cookies/ We used a 20 oz box of Ghirardelli dark chocolate brownie mix, and following the tip in the recipe, we added 2 Tbsp flour (which resulted in a cakey cookie, so we may reduce to 1 Tbsp next time). For the optional extra ingredients, we… Continue reading Ghirardelli brownie cookies

Chocolate snack cake
We tried this easy, egg-free recipe, which uses white vinegar: https://www.food.com/recipe/one-pan-chocolate-snack-cake-313457 We did not have an 8x11" baking dish, so we used a 9" round clear glass baking dish. We increased the baking time to 40 mins (from 30) at 350. (Oct. 2020) We also made powdered sugar icing: https://www.myfoodandfamily.com/recipe/056132/easy-powdered-sugar-icing-recipe
King Arthur’s gluten-free brownies
We purchased King Arthur’s gluten-free flour for a different recipe, and we now have a lot of this special flour leftover. We tried this brownie recipe: https://www.kingarthurflour.com/recipes/gluten-free-brownies-recipe Because we used dark cocoa powder, we omitted the optional chocolate chips. We did include the optional 1 cup walnuts, and we used superfine sugar (as recommended by… Continue reading King Arthur’s gluten-free brownies

Chocolate-covered cornflake clusters
After discovering this simple dessert on vacation, we tried making it at home: https://www.foodandwine.com/recipes/chocolate-corn-flakes Our modifications: based on our pantry, we used 3 cups cornflakes and only 10 oz semi-sweet chocolate chips (ideally, we would have used 12 oz). We microwaved the chocolate chips in a medium glass mixing bowl at 30-second intervals, stirring b/w… Continue reading Chocolate-covered cornflake clusters
Dark chocolate gelt with candied orange peel and toasted nuts
We tried this recipe: https://www.marthastewart.com/1136696/homemade-gelt Based on our pantry, we melted ½ cup dark chocolate discs and 1 cup dark chocolate chips, microwaving in 30 second intervals. We skipped the safflower oil, instead pouring the melted chocolate into paper muffin cups lining a 12 cup muffin tin (see Note below). Before the chocolate hardened, we… Continue reading Dark chocolate gelt with candied orange peel and toasted nuts
Simple chocolate pudding
We tried this recipe because it required only pantry ingredients and did not call for whipping or heavy cream: https://cookiesandcups.com/easy-chocolate-pudding/ We garnished with fresh spearmint. (May 2018) Note: For a spicy variation, add a dash each cayenne (1/8 to 1/16 tsp) and cinnamon (1/8 tsp) to the dry ingredients. You also can garnish with the… Continue reading Simple chocolate pudding

Chocolate-dipped ginger puff pastry twists
This is a relatively easy dessert to make from store-bought puff pastry. Make sure your fridge has room to hold two baking sheets, as refrigeration is required between steps. To retain crispness, store the finished twists at room temperature. Recipe here: http://m.puffpastry.com/recipe/50036/chocolate-dipped-spiced-twists (Feb. 2016)
Chocolate and pecan croissant bundles
We followed this recipe for triple chocolate bundles, but used only two type of chocolate chips (a 2:1 ratio of semi-sweet to milk) and added pecans in lieu of the third chocolate flavor. Recipe here: http://www.tasteofhome.com/recipes/triple-chocolate-bundles (Feb. 2016)
