We tried the jam from this recipe: https://www.howsweeteats.com/2016/08/avocado-bacon-and-egg-toast-with-quick-tomato-jam/ Our modifications: first, we used 1.5 cups diced fresh hothouse tomatoes (5 medium). Second, we increased the apple cider vinegar from 1 tsp to 1 Tbsp. The next time, we may add some crushed red pepper. We served this with roasted cauliflower (lightly seasoned with Greek oregano,… Continue reading Quick tomato jam with Italian flavors

Chili powder
We tried this recipe, but we reduced the cayenne to ¼ tsp: https://www.allrecipes.com/recipe/237172/chili-powder/ (Mar. 2021)
Mexican enchilada sauce
We made this recipe as a base for chilaquiles rojas: https://cookieandkate.com/enchilada-sauce-recipe/ We reduced the chili powder to 1 tsp and used 2 cups chicken broth, but this recipe easily could be vegetarian. (Oct. 2020)
Korean-Chinese sweet and sour sauce (for tang soo yook)
We ordered chicken tang soo yook from a restaurant far from our neighborhood. When we got home, we discovered to our dismay that the restaurant forgot to include the sauce. We made our own sauce following this Maangchi recipe: https://www.maangchi.com/recipe/tangsuyuk. Our modifications: we omitted the wood ear mushrooms and cucumber. We used ½ yellow bell… Continue reading Korean-Chinese sweet and sour sauce (for tang soo yook)
Simple basil pesto
We tried this Ina Garten recipe: https://www.foodnetwork.com/recipes/ina-garten/pesto-recipe-1951665 It was delicious, but a bit too runny. The next time, we will reduce the olive oil by 1/3. (Or perhaps we should have measured the basil leaves more tightly instead of loosely.) We served this pesto with cavatappi and some quartered grape tomatoes. (Sept. 2020)
Open-faced rotisserie chicken sandwich with homemade gravy
This was a good use of ¼ rotisserie chicken (2 skin on, bone-in thighs, the back, and a wing) that we had leftover. We made gravy following this recipe: https://tastesbetterfromscratch.com/chicken-gravy/ Our modifications: Because we did not have any drippings, I browned the bones (with some meat attached) and skin with about 1 Tbsp vegetable oil… Continue reading Open-faced rotisserie chicken sandwich with homemade gravy
Strawberry plum jam
While on vacation with a limited pantry, I had a sudden craving for peanut butter-jelly roll-ups. Because we did not have jam or jelly, I decided to make a micro-batch based on what we had on hand: 6 strawberries (cut into quarters), 1 plum (peel-on, pitted, and cut into ½" pieces), ½ cup white sugar,… Continue reading Strawberry plum jam
Dry onion soup mix
We ran out of Lipton’s, so we tried making a version from scratch: https://www.allrecipes.com/recipe/217155/dry-onion-soup-mix/ Our modifications based on our pantry: first, we used Korean beef bouillon powder (Dashida brand) instead of standard beef bouillon powder. Second, we used dried chives in lieu of parsley flakes. (July 2020)
Creole seasoning blend
We followed this recipe but omitted the dried basil (which we didn’t have): https://www.daringgourmet.com/creole-seasoning-recipe/ (Apr. 2020)
Persian meat spice blend
We tried this recipe as a base for a Persian beef and yellow split pea stew (koresh ghymeh): http://persianmama.com/all-about-spices-2/ (Persian meat spice blend I). Combine the following: 2 Tbsp turmeric, 1 Tbsp ground cumin, 1 tsp crushed Bay leaf (about 1 medium leaf), and 1 tsp each ground black pepper, cayenne pepper (called “chili” in… Continue reading Persian meat spice blend
