Simple breakfast quesadilla with pinto beans

We tried this recipe: https://cookieandkate.com/simple-breakfast-quesadillas-recipe/ Based on our pantry, we omitted cilantro and pickled jalapeños. We added 1 Tbsp chopped scallions into the egg and pinto bean mixture before scrambling them. For the quesadilla, we used shredded Mexican cheese and added a layer of fresh Spinach leaves. Scrambled egg and black bean burrito

We repurposed the black bean puree from this nachos recipe: https://href.li/?https://hispanickitchen.com/recipes/spicy-black-bean-nachos/ For two servings: first, prepare the black bean puree from the above recipe (you will need about ¼ cup total for this burrito recipe). Second, scramble three large eggs (we added 2 tsp milk to the egg mixture and cooked in 1 tsp butter).… Continue reading Scrambled egg and black bean burrito

Crispy rice frittata

We tried this recipe for our leftover jasmine rice: https://www.bonappetit.com/story/crispy-rice-frittata Our modifications: first, we added a handful of baby spinach (about 15 leaves), cut into ½" slices. We sauteed the spinach along with the scallions, but the next time we’ll probably sprinkle them into the egg mixture. We also used canola instead of olive oil… Continue reading Crispy rice frittata

Spinach and garlic egg white omelette

We tossed this together on the fly. First, heat a medium-sized (7 inch) nonstick pan and lightly spray with oil. Add 1 minced garlic clove and a handful of julienned fresh baby spinach (about 10 baby spinach leaves), and saute lightly for a minute. Spread the spinach mixture evenly along the pan, then lower heat… Continue reading Spinach and garlic egg white omelette

Pan-seared parmesan rice cakes

We had 3 cups of leftover cooked rice (a mix of jasmine and basmati), and we tried this recipe: https://anoregoncottage.com/parmesan-rice-cakes/ We found 4 (not 3) large eggs achieved the right batter texture. For the parmesan, we used slightly over ½ cup (not quite 2/3 cups) Kraft shredded parmesan (which we prefer to the crumbled kind)… Continue reading Pan-seared parmesan rice cakes

French-inspired hard-boiled egg sandwich

During this pandemic, I felt inspired by a French baguette sandwich I had in Bordeaux many years ago. Based on our pandemic pantry, we used ¼ baguette (halved lengthwise), mayo (enough for a light spread on both sides of the baguette), 2 hardboiled eggs, ½ tomato (three ½" slices), and 1 Tbsp minced parsley. Here… Continue reading French-inspired hard-boiled egg sandwich

Baked rice pudding with brulee topping

We tried this recipe: https://www.lanascooking.com/baked-rice-pudding/ Our modifications: first, we used cooked basmati rice and golden raisins. Second, instead of 1.5 cups sugar and zest from one lemon, we used 1.5 cups of homemade citrus-infused sugar. Third, once the baking ended, we let the custard cool for 10 mins and then sprinkled with 2 Tbsp sugar… Continue reading Baked rice pudding with brulee topping

Scrambled egg, bacon, and avocado breakfast sandwich

This sandwich is simple to assemble as long as you have the components: first, prepare 6 bacon slices (we used microwave-ready precooked bacon) and set aside. Second, prepare scrambled eggs (we used 3 eggs and 2 egg whites mixed with 2 tsp half and half or milk). For scrambled egg technique, we loosely followed the… Continue reading Scrambled egg, bacon, and avocado breakfast sandwich

Roasted vegetable, rice, and cheese frittata

We made a version of frittata based on our pantry: leeks, asparagus, bell pepper, and mushrooms. First, preheat the oven to 425. Take out two rimmed baking sheets. Wash and dry 6 asparagus spears, ½ bell pepper (we prefer any color but green), and 8 oz (about 8-9) cremini mushrooms. Cut the asparagus into 1.5-2"… Continue reading Roasted vegetable, rice, and cheese frittata

Persian spiced omelette with caramelized dates

This is a warm and comforting breakfast that reminded us of sweet matzoh brie and French toast. We tried this recipe, but we doubled the amounts (for two servings) and also added specific measurements where needed: https://www.eater.com/2017/1/28/14421434/recipe-persian-date-omelet Our modifications: first, cut ½ cup pitted Medjool or Persian dates in half, lengthwise. Place the halved dates… Continue reading Persian spiced omelette with caramelized dates
