Burmese lima bean soup with tender greens
Heat 1 tsp neutral oil in a Dutch oven, then sauté 1 ½ cups minced shallots and ¼ tsp turmeric. Add 1 cup frozen lima beans and 4 cups hot water, then bring to a boil. Reduce to a simmer and cook until beans are tender. Using an immersion blender, purée the beans until relatively… Continue reading Burmese lima bean soup with tender greens
Italian-style home-cooked borlotti beans
This is an elegantly simple recipe from Jamie Oliver: http://www.foodnetwork.com/recipes/jamie-oliver/humble-home-cooked-beans-recipe.html. We modified by starting with the following flavor base: sauté 1 oz center cut bacon (cut into matchsticks) until browned, then add 2 minced shallots and sauté until fragrant. We also used: 8 cloves minced (peeled) garlic in lieu of 3 unpeeled cloves; 2 small… Continue reading Italian-style home-cooked borlotti beans
Chinese-style lettuce wraps with minced chicken, tofu, and shiitakes
We tried this recipe from Andrea Nguyen: http://www.vietworldkitchen.com/blog/2012/08/chicken-tofu-and-shiitake-lettuce-cups-recipe.html. We used 6 oz chopped water chestnuts in lieu of pine nuts as well as five fresh shiitakes instead of two dry. We also used romaine lettuce instead of iceberg. Chinese-style chicken cashew lettuce wraps
This is not exactly authentic, but the flavor and texture contrasts were good. Recipe here: http://shewearsmanyhats.com/chicken-cashew-lettuce-wraps/ (May 2016)
Korean-style anchovy-infused zucchini

Separately, heat 2 tsp neutral vegetable oil in a large wok, then add 1 clove garlic (microplaned) and 1 tsp anchovy paste. Sauté until fragrant, then add 1 Tbsp mirin and the zucchini ribbons. Mix well, and sauté until zucchini is… Continue reading Korean-style anchovy-infused zucchini
Vietnamese kohlrabi stir-fried with garlic and egg (su hao xao toi)
I tried this simple, delicious recipe from Andrea Nguyen: http://www.vietworldkitchen.com/blog/2010/07/kohlrabi-stirfried-with-garlic-and-egg-recipe-su-hao-xao-toi.html. I also followed her suggestion of adding 2 tsp dried shrimp to the onion-garlic mixture. (Mar. 2016) Source: Andrea Nguyen, author and teacher, Vietworldkitchen.com.
Roasted cauliflower with dates and pine nuts
I stumbled upon this recipe, and it was delicious - sweet, savory, and a little salty. Details here: http://www.foodnetwork.com/recipes/claire-robinson/roasted-cauliflower-with-dates-and-pine-nuts-recipe.html (Mar. 2016)
Pan-seared spam and scrambled eggs over rice
We had two slices of spam leftover from making spam musubi, so we tried this quick and easy recipe: http://eatingrichly.com/spam-eggs-and-rice/. Because spam already is salty, we reduced the amount of soy and fish sauce in the marinade to 1 Tsp and 1 tsp, respectively. We did not add salt or pepper to the egg mixture.… Continue reading Pan-seared spam and scrambled eggs over rice
Scrambled egg toast by Smitten Kitchen
Great tips on soft scrambled eggs. Goat cheese on toast goes so well with the eggs. In lieu of chives, we used minced Italian parsley. Recipe here: http://smittenkitchen.com/blog/2010/05/scrambled-egg-toast/ (Dec. 2015)
