We tried this recipe from RecipeTin Eats: https://www.recipetineats.com/arayes-lebanese-meat-stuffed-pita/ We used 1 lb minced beef for the recipe. Our modifications: first, we followed the spice blend in the recipe except that we used 1/2 tsp ground Kashmiri pepper instead of cayenne. we could not find large pita, so we used five Middle East Bakery’s whole wheat…… Continue reading Lebanese crispy meat-stuffed pita (arayes)

Lebanese bulgur pilaf with tomato and chick peas
We tried this recipe: https://feelgoodfoodie.net/recipe/bulgur-pilaf/. We found the ratio of 3 cups broth to 1.5 cups bulgur too wet; the next time we may factor in the liquid emitted from the fresh tomato and 1/4 bell pepper. At the end of cooking, we squeezed juice from 1/3 of a lemon into the pilaf. We also…… Continue reading Lebanese bulgur pilaf with tomato and chick peas
Middle Eastern style lentil and split yellow pea soup
We were craving a legume-based soup and tried this recipe: https://thishungrykitten.com/2013/03/26/middle-eastern-delight-lentil-and-split-pea-soup/ This was comforting, earthy, and tasty. Our modifications: first, we don’t have a slow cooker, so we made this on the stovetop. Second, we increased the ground cumin and supplemented with ground coriander. Specifically, after sauteeing the onion, we added 2 tsp cumin and…… Continue reading Middle Eastern style lentil and split yellow pea soup
Persian lentil soup
We had a craving for lentil soup and were intrigued by this recipe: https://girlandthekitchen.com/persian-lentil-soup/ Although we used chicken broth (4 cups unsalted, 4 cups Better Than Bouillon), this recipe easily could be vegetarian if made with vegetable broth. Although we try to use no-salt canned tomatoes, we used stewed tomatoes (which are seasoned and contain…… Continue reading Persian lentil soup
Middle Eastern 7-spice blend (baharat)
We couldn’t find baharat at our local supermarket, so we tried this recipe: https://www.food.com/recipe/baharat-spice-blend-224763 Interestingly, the most challenging part of this recipe was manually grinding black peppercorns (all of our other spices were already ground). We will use the baharat as an ingredient in a Persian lentil soup that we’ll post about separately. (Oct. 2023)
Moroccan chick pea and lentil soup (harira)
We have made harira before, but we were intrigued by this recipe's use of two different types of lentils (red and green) plus chick peas: https://www.feastingathome.com/harira-soup/ We followed the recipe pretty closely, and it turned out well. Our minor modifications: first, instead of cayenne pepper, we used 1/2 tsp Kashmiri chili, a lower heat ground… Continue reading Moroccan chick pea and lentil soup (harira)
Lebanese lentils and bulgur with caramelized onion (mujadara hamra)
We had a craving for mujadara, and we tried this version with bulgur instead of rice: https://www.maureenabood.com/lebanese-mujadara/ We followed the instructions pretty closely. Our minor modifications: first, we cooked the onions in our Ultimate pan, and we found that it took more time (35 mins) and more canola oil (about 1/2 cup total) to properly…… Continue reading Lebanese lentils and bulgur with caramelized onion (mujadara hamra)
Egyptian fava beans, version 3 (ful mudammes)
We tried this recipe for a quick lunch: https://moribyan.com/ful-medames-vegetarian-fava-bean-stew/ We followed the instructions, except we used 1 tsp smoked paprika instead of regular paprika. This was a mistake because the smokiness overpowered the dish. The next time we will use regular paprika and may reduce to 1/2 tsp. (June 2023)
Egyptian fava beans (ful mudammes), version 2
We made this recipe again, but followed the instructions pretty closely this time: https://www.themediterraneandish.com/foul-mudammas-recipe/#tasty-recipes-33099-jump-target Our minor modifications: First, we halved the recipe. Second, we drained the canned fava bean liquid before placing in our Ultimate Pan and adding 1/4 cup water. The fresh garlic / hot pepper / lemon juice dressing added a brightness to… Continue reading Egyptian fava beans (ful mudammes), version 2
Vegetable tagine with Moroccan flavors
This is a straightforward recipe from RecipeTinEats that we doctored up a bit: https://www.recipetineats.com/vegetable-tagine/ It’s also a great use of vegetables in your pantry. This recipe is vegetarian as written (although we used chicken broth). We made the following modifications: first, for the spice mix, we sometimes find ground cardamom overpowering, so we reduced it…… Continue reading Vegetable tagine with Moroccan flavors
