We threw together this dish on a whim, drawing from multiple sources and utilizing our pantry. First, we made jasmine rice in our rice cooker, enough to yield 3 cups cooked rice. Second, using a large nonstick pan, we heated 2 Tbsp unsalted butter on medium and then added 1.5 cups kimchi (reserving kimchi liquid).…… Continue reading Kimchi fried rice with omelette (omurice)

Small batch rice krispie treats
I had a sudden craving for these treats but didn't want to make a full batch. We tried this recipe: https://www.dessertfortwo.com/rice-crispy-treats-small-batch/ This yielded 6 cupcake-sized treats. This small batch recipe calls for 2 Tbsp butter, which we found to be too much for 10 standard marshmallows and 1.5 cups crisped rice. Basmati rice, stovetop method

Indian lentils and rice (dal kichdi)
We made this recipe using jasmine rice: https://www.funfoodfrolic.com/dal-khichdi-recipe/ At the end of natural release after pressure cooking, we folded in about 2 oz of baby spinach to the kichdi. The flavors were strong and it was tasty, but we found the rice mushy. We garnished with fresh cilantro. (Apr. 2024)

Katrina’s brown rice and sausage stuffing / dressing
This is a family recipe from my sister’s sister-in-law. We enjoyed it so much at Katrina’s Thanksgiving feasts in years past that she shared the recipe (which originated with her late uncle). Cuban beans and rice
We had a craving for moros y cristianos, so we tried this recipe: https://www.chewoutloud.com/cuban-rice-and-beans-recipe/ We substituted red bell pepper for green. We also followed the instructions exactly (except that we thoroughly rinsed and drained the rice to remove excess starch). To our disappointment, the result was overcooked and mushy rice. Otherwise, the flavor of the… Continue reading Cuban beans and rice
