Roasted root vegetable and mushroom shepherdess pie, version 3

We loosely followed this recipe: https://www.seriouseats.com/recipes/2012/11/mushroom-and-root-vegetable-shepherds-pie-recipe.html Based on our pantry during the pandemic, we tried this with 16 oz cremini mushrooms, 2 carrots, 2 medium Korean sweet potatoes, 2 purple-topped turnips, and 2 large shallots which we tossed with corn oil, salt, black pepper, and a dash of marash pepper, then oven-roasted for 30 mins… Continue reading Roasted root vegetable and mushroom shepherdess pie, version 3

Roasted root vegetable and mushroom shepherdess pie, version 2

We loosely followed this recipe:  https://www.seriouseats.com/recipes/2012/11/mushroom-and-root-vegetable-shepherds-pie-recipe.html Based on our pantry during the pandemic, we tried this with 16 oz cremini mushrooms, 4 carrots, 3 Korean sweet potatoes, and 2 rutabagas, which we tossed with corn oil, salt, black pepper, and a dash of marash pepper, then oven-roasted at 425 for 30 mins (mushrooms on one… Continue reading Roasted root vegetable and mushroom shepherdess pie, version 2

Fisherman’s pie

This essentially is a seafood version of shepherd’s pie. We took inspiration from this recipe: https://www.sandraseasycooking.com/2019/06/easy-fisherman-pie.html, but we halved the ingredients and used our own mashed potato topping. First, preheat oven to 375. At the same time, boil two eggs until they are hard-boiled, and then set aside for later use. To prepare the fish… Continue reading Fisherman’s pie

Turkey and potato keema puffs

This is our latest pandemic addiction. We made this filling: https://piglettedc.tumblr.com/post/152921985856/indian-style-curried-minced-turkey-with-potatoes. We froze batches of it in 16 oz containers. We defrost a container and make curry puffs using premade puff pastry. We tried Wewalka brand pastry sheets (13.2 oz), which fills up only one baking sheet and yields 8 puffs. Because the parchment paper… Continue reading Turkey and potato keema puffs

Handheld chicken pot pie

We tried this NYT recipe: https://cooking.nytimes.com/recipes/1019188-flaky-chicken-hand-pies?smid=ck-recipe-iOS-share As a shortcut, we used a 2 ¼ lb rotisserie chicken, which we pulled apart into bite-sized pieces (instead of cutting into chunks), discarding skin and bones. Because we weren’t able to roll out the single sheet of puff pastry to reach 15x15", we were able to fit only… Continue reading Handheld chicken pot pie

Keema puffs (curried minced turkey and peas in puff pastry)

For the filling: First, using a large wok, heat 2-3 Tbsp neutral vegetable oil on medium heat. Add 1 1/3 lb minced turkey, increase heat to medium-high, and brown the meat. In the meantime, mince 1 large (or 2 medium) onion, 3 large cloves garlic, and 1 inch peeled ginger; I did this using a… Continue reading Keema puffs (curried minced turkey and peas in puff pastry)

Roasted root vegetable and mushroom shepherdess pie, version 1

We followed this recipe, but made several modifications: https://www.seriouseats.com/recipes/2012/11/mushroom-and-root-vegetable-shepherds-pie-recipe.html First, we seasoned the mushrooms and the vegetables separately with a few sprigs each marjoram and thyme, 1-2 Tbsp olive oil, and a little salt and pepper. In addition to oven-roasting 6 oz cremini mushrooms (halved or quartered for uniform size) for 30 mins, we oven-roasted… Continue reading Roasted root vegetable and mushroom shepherdess pie, version 1

South African casserole (bobotie)

Thanks to my friend Laura, I was able to try out Marcus Samuelsson’s recipe. Saute minced beef and chopped red onion. Once beef is well-cooked, add ground cumin, coriander seeds, and curry (here, Jamaican curry powder). Let simmer for 10 minutes, then add bread crumbs, unsweetened peanut butter, a dash of salt, and some water.… Continue reading South African casserole (bobotie)
