My husband and I had a craving for Hamburger Helper from our childhood, but we wanted to make a healthier, scratch version. We tried this SkinnyTaste recipe: https://www.skinnytaste.com/homemade-hamburger-helper/. Our modifications: first, instead of beef, we used 3/4 lb of minced turkey and 1/4 tsp Kashmiri low-heat ground pepper (instead of paprika). We also sopped up…… Continue reading SkinnyTaste’s Hamburger Helper with minced turkey

Turkey and brown rice stuffed peppers
My husband loves stuffed peppers, and we have this recipe on regular rotation: https://www.skinnytaste.com/turkey-stuffed-peppers-45-pts/ Our modifications: first, we often use 1 lb minced chicken instead of turkey. Second, we saute the onion (often, a shallot) in 2 tsp canola oil, then add the minced garlic. For the filling, in addition to the cumin and garlic… Continue reading Turkey and brown rice stuffed peppers
Turkey pumpkin chili
We tried this recipe: https://www.skinnytaste.com/turkey-pumpkin-chili/ We reduced the cayenne and added a bit more broth to reduce viscosity (caused by the pumpkin puree). We also added only a handful of baby spinach. This was tasty. We garnished with cilantro and lime wedges. (May 2021)
Cauliflower rice chicken biryani
We tried this SkinnyTaste recipe: https://www.skinnytaste.com/cauliflower-rice-chicken-biryani/ For the cauliflower, we found that food processing a medium head was sufficient. We used only one jalapeño, seeded and cut into thin half-moons. (May 2021)

We tried this SkinnyTaste recipe: https://www.skinnytaste.com/chicken-and-mushrooms-in-garlic-white/ We used skinless, boneless chicken breast, which we cut into fingers. We think chicken cutlets (similar to chicken piccata) may be better. We added some fresh lemon juice to the sauce at the end. (May 2021)
Salisbury steak meatballs

We increased the cremini mushrooms to 8 oz; we used one minced mushroom for the meatball mixture. We also browned the meatballs in batches in a large nonstick pan. We simmered the meatballs, mushrooms, and sauce on the stovetop for 29 mins. We served the… Continue reading Salisbury steak meatballs
Beef barley soup, version 2
We tried this Skinnytaste recipe: https://www.skinnytaste.com/beef-barley-soup/ We made a few modifications: first, we cut our beef stew meat into bite-sized pieces, so we reduced pressure-cooking time to 12 mins on medium-low (we started timer after the pressure cooker had reached full pressure). Second, we added 6 cups beef broth instead of water, and we added… Continue reading Beef barley soup, version 2
