Korean banquet noodles (janchi guksu)

I haven’t had this dish of years but had a sudden craving. We tried this recipe: http://aeriskitchen.com/2012/03/sempio-banquet-guksu/ Our modifications: we used ½ lb minced pork in lieu of 1/3 lb minced beef (and adjusted the seasonings accordingly). Instead of zucchini, we trimmed and cut ¼ lb string beans in half crosswise and lengthwise, blanched them… Continue reading Korean banquet noodles (janchi guksu)

Quick-baked potato

We tried this microwave recipe for baking a potato, and it was surprisingly good: http://www.familyfoodonthetable.com/10-minute-baked-potatoes/ We baked 2 medium Yukon potatoes in 11 mins total. Specifically, we poked the top of each potato several times with a fork, placed about 3 inches apart on a large, microwave-proof plate, and microwaved for 10 mins on high… Continue reading Quick-baked potato

Salisbury steak with mushroom gravy

We tried this SkinnyTaste recipe, which ingeniously lightens the dish by substituting half of the minced beef with minced turkey. http://www.skinnytaste.com/skinny-salisbury-steak-with-mushroom/ Although the recipe calls for unseasoned breadcrumbs, we added about ½ tsp each freshly minced sage, oregano, and thyme to the meat mixture. To shape the patties, we used an oval ½ cup measuring… Continue reading Salisbury steak with mushroom gravy

Simple pound cake

We tried this Ina Garten recipe: http://www.foodnetwork.com/recipes/ina-garten/plain-pound-cake-recipe.html but reduced the sugar to 1 ¾ cups and salt to ¾ tsp. This recipe yields 2 regular loaves, or 1 regular loaf and 3 mini-loaves (one of which is depicted). Fill the loaves only ½ way, as the batter expands while baking. During my childhood, I grew… Continue reading Simple pound cake

Buffalo chicken drumsticks with charred romaine hearts and blue cheese dressing

I grew up eating buffalo chicken wings, and we tried this ingenious supper version from Molly Gilbert’s Sheet Pan Suppers cookbook. The Buffalo chicken recipe is available here: http://fleurdelolly.blogspot.com/2015/04/sheet-pan-suppers-buffalo-chicken.html?m=1 and the charred romaine hearts recipe is here: http://fleurdelolly.blogspot.com/2015/04/sheet-pan-suppers-charred-romaine-with.html?m=1 (July 2016) Our modifications: We increased basic cooking time from 30/35 mins to 40 mins. We also… Continue reading Buffalo chicken drumsticks with charred romaine hearts and blue cheese dressing

Lentil and minced turkey sloppy joes

A healthier version of a childhood favorite. We followed this recipe but used minced dark turkey meat instead of minced beef: http://www.foodnetwork.com/recipes/food-network-kitchens/lentil-sloppy-joes-recipe.html. We also omitted the last cup of water when combining the cooked mince with the simmered lentils; the lentil mixture had plenty of liquid. We also used one sprig fresh marjoram in lieu… Continue reading Lentil and minced turkey sloppy joes
