We tried this recipe, and it was quite tasty: https://www.thespruceeats.com/yuca-with-garlic-sauce-yuca-con-mojo-2138229 Prior to boiling the cassava pieces, we removed the tough stem that runs from top to bottom of the cassava. We also used a small shallot instead of two red onions. (July 2023).

Cuban beans and rice
We had a craving for moros y cristianos, so we tried this recipe: https://www.chewoutloud.com/cuban-rice-and-beans-recipe/ We substituted red bell pepper for green. We also followed the instructions exactly (except that we thoroughly rinsed and drained the rice to remove excess starch). To our disappointment, the result was overcooked and mushy rice. Otherwise, the flavor of the… Continue reading Cuban beans and rice
Picadillo (Cuban minced beef stew)
We tried this NYT recipe, and it was delicious: https://cooking.nytimes.com/recipes/1016814-picadillo Our modifications: first, we used 1 lb minced bison instead of 1 ½ lb minced beef. Second, we used 1 oz Matador slim jim (halved vertically and then diced) instead of 2 oz chorizo. Third, to accommodate the reduced amount of protein, we reduced the… Continue reading Picadillo (Cuban minced beef stew)
Cuban black beans
We tried this quick version with two 13.5 oz cans of black beans. We used two small jalapeño peppers in lieu of bell pepper. We also used a small sprig fresh oregano instead of dried. Details here: http://www.food.com/recipe/frijoles-negros-cuban-black-beans-8969 (Feb. 2017)
Cuban picadillo
We tried this version: http://www.panningtheglobe.com/2016/09/11/cuban-picadillo-ground-beef-stew/. Our modifications: (1) In lieu of smoked paprika, we used half paprika and smoked chipotle pepper; (2) we used golden raisins instead of black raisins; and (3) we used canned diced tomatoes instead of canned whole plum tomatoes, crushed by hand. We also added a dash of sugar at the… Continue reading Cuban picadillo
Cuban black beans and rice with bacon (moros y cristianos)
Our favorite version of this dish is from Larios on the Beach, a South Beach restaurant owned by Gloria and Emilio Estefan; we loved its drier texture and hint of bacon fat. So we tried their moros recipe from The Estefan Kitchen cookbook, available at Amazon: https://www.amazon.com/dp/045122518X/ref=cm_sw_r_sms_awd_y3yfxbXGVV5BK (Apr. 2016)
Cuban churrasco
We followed this recipe but did not purée the marinade ingredients. http://icuban.com/food/mobile/churrasco_cubano.html After marinating the steak overnight, we cut it into four serving size pieces. We pan-seared each piece and then finished them (in a 9x13 baking dish) in the oven at 350 for about 10 mins. (Apr. 2016)
Cuban black beans and rice (moros y cristianos)
I tried this recipe from Three Guys from Miami Cook Cuban: http://icuban.com/food/mobile/moros_y_cristianos.html. This was tasty, but I prefer the drier version crisped up with lard. It also was quite involved, since this recipe called for dried black beans that needed to be reconstituted. (Apr. 2016)
Cuban rice, made in a rice cooker
Rinse 2 cups (using a rice cooker measuring cup) of long-grain rice several times, drain, then place in the inner pot of an electric rice cooker. Add one garlic clove (peeled and bruised), 1 tsp salt, and 1 Tbsp olive oil. Carefully add water to the pot until it reaches the “2 cup” mark on… Continue reading Cuban rice, made in a rice cooker
Cuban minced beef hash (picadillo)
Recipe here: http://icuban.com/food/mobile/picadillo.html. We used olives stuffed with pimiento. We also made a few modifications: first, yellow and red bell peppers in lieu of two green; second, fresh marjoram in lieu of dried oregano; and finally, golden raisins in lieu of regular raisins. (Apr. 2016).
