Pressure cooker classic American beef stew

We tried this recipe: http://www.seriouseats.com/recipes/2016/10/pressure-cooker-beef-stew-recipe.html It was supposed to take less than an hour, but with prep and multiple steps involved, it took over 2 hours and was quite complicated. Our modifications: first, given the diameter of a standard pressure cooker, we recommend cutting the chuck roast steaks into 6 pieces rather than 3 to… Continue reading Pressure cooker classic American beef stew

Pressure cooker classic beef chili

We tried this NYT recipe: https://cooking.nytimes.com/recipes/1019159-pressure-cooker-classic-beef-chili We substantially reduced the chili powder from 2 Tbsp to 2 tsp and used no-salt kidney beans and diced tomatoes. We also used red bell pepper instead of green. This whole recipe took less than 1 hour from prep to serving. We omitted the garnishes. (July 2018)

Colombian chicken and potato stew, pressure cooker style

We tried this recipe: http://www.seriouseats.com/recipes/2012/05/colombian-chicken-stew-with-potatoes-tomato-onion-recipe.html Our modifications: first, in the pressure cooker bottom, we sautéed 1 onion (sliced along the grain) and 6 large garlic cloves (rough-cut) in 2 tsp olive oil. Second, after placing the skin-in, bone-in chicken pieces in the pot, we added 1 Tbsp Colman’s dry mustard, 1 tsp low-sodium Worcestershire sauce,… Continue reading Colombian chicken and potato stew, pressure cooker style

Sloppy lasagna, pressure-cooker style

This marked my first time using a pressure cooker to make lasagna, both the sauce and cooking the lasagna sheets. The recipe is from the Hip Pressure Cooking cookbook by Laura Pazzaglia. Here is a similar recipe she posted on her Hip Pressure Cooking blog: http://www.hippressurecooking.com/pressure-cooker-pasta-casserole-a-cheesy-meaty-mess-mezzemaniche-pasticciate/. The sloppy lasagna was very tasty, but I burnt… Continue reading Sloppy lasagna, pressure-cooker style

Pressure-cooker Middle Eastern style chicken and rice

We garnished with dried cherries instead of raisins. We also browned the chicken, single layer on a foil-lined cookie sheet, under the broiler on “high” for about 5 mins. Recipe here: http://www.hippressurecooking.com/pressure-cooker-chicken-and-rice-one-pot-meal/ We often reduce the salt from 3 tsp (1 Tbsp) to 1 ½ tsp (½ Tbsp). (Oct. 2015) Note: The recipe recommends 4… Continue reading Pressure-cooker Middle Eastern style chicken and rice

Korean soy-braised beef with mushrooms and hot peppers (jang jorim)

This is one of my childhood favorites, something that always reminds me of my mom. Cut 2 ½ to 3 lbs of boneless stewing beef (such as flank or beef chuck) into bite-sized cubes (1.5-2") and place in the bottom of a large pressure cooker. Cover with 1 ½ cups soy sauce and ½ cup… Continue reading Korean soy-braised beef with mushrooms and hot peppers (jang jorim)
