We found this recipe intriguing and decided to give it a try: https://cooking.nytimes.com/recipes/1025554-sheet-pan-chicken-tikka-thighs?smid=ck-recipe-iOS-share This was remarkably flavorful, with great mouthfeel; it’s definitely a keeper. Our modifications: first, 1.25 lb was the smallest unit of boneless chicken thighs we could find, so we slightly rounded up the other ingredients. For the yogurt, we used Fage nonfat…… Continue reading Sheet-pan chicken tikka with bell pepper, cauliflower, and shallots

Giada’s sheet pan eggplant parmesan
At the beach, we decided to try this simple sheet pan recipe by Giada de Laurentiis: https://giadzy.com/blogs/recipes/sheetpan-eggplant-parmesan This was an easy, delicious meal that needed only a handful of ingredients. The panko topping was particularly good, adding a light crispy texture to the tender eggplant. Our modifications: first, due to a very sensitive smoke alarm…… Continue reading Giada’s sheet pan eggplant parmesan
Lemon herb roasted chicken with potatoes and asparagus
We spotted this recipe from Instagram and decided to try it: https://www.instagram.com/reel/DIaSusnhCLA/?igsh=MTFsb3hkZjNpY210OA== The instructions were scant (and sometimes inconsistent with the video), but we followed the ingredient list in the second photo (below). Our modifications: first, due to our overly sensitive smoke alarm, we used canola oil instead of olive oil based on our overly…… Continue reading Lemon herb roasted chicken with potatoes and asparagus
Roasted sweet potatoes with black beans and cheese
We tried this recipe: https://cooking.nytimes.com/recipes/1019600-loaded-sweet-potatoes-with-black-beans-and-cheddar?smid=ck-recipe-iOS-share Instead of cheddar cheese, we used shredded Mexican blend. This was simple and delicious. The cheese and black beans complemented the sweet potato well. (Mar. 2022)
Salted honey popcorn and nut crunch
Details here: https://www.realsimple.com/food-recipes/browse-all-recipes/honey-nut-popcorn-recipe Our modifications: first, instead of 1 cup nuts, we used ½ cup raw pecan halves and ½ cup broken salted pretzels. Second, we reduced the honey and butter mixture by ¼ to avoid a cloying flavor, and we used only 1 tsp salt (reduced from 1 Tbsp). (July 2021)
Cauliflower-walnut vegetarian taco meat
We tried this recipe, and it was great: https://pinchofyum.com/cauliflower-walnut-vegetarian-taco-meat We served it with Goya chipotle chiles en adobo as sauce, shredded cheddar cheese, and tortilla chips. (Mar. 2021)
Roasted sweet potatoes with smoked paprika
We were looking for a way to use up our leftovers - two raw sweet potatoes already peeled and cut into large, uneven chunks. We cut the potato chunks to make as uniform cubes as possible, and then we tried this recipe: https://cooking.nytimes.com/recipes/1018993-roasted-sweet-potatoes-with-smoked-paprika?smid=ck-recipe-iOS-share The recipe called for 4 sweet potatoes, so we halved the ingredient… Continue reading Roasted sweet potatoes with smoked paprika
Palestinian roast chicken with sumac and red onion (mussakhan)
Details here: https://piglettedc.tumblr.com/post/186127386521/palestinian-roast-chicken-with-sumac-and-red-onion After roasting the chicken for 1 hour at 350, we soaked up excess liquid from the red onions and then broiled on low until the chicken and onions were browned. Instead of frying the pine nuts, we toasted them on a foil-lined sheet in the toaster oven at 300 until slightly browned.… Continue reading Palestinian roast chicken with sumac and red onion (mussakhan)
Bacon-wrapped dried apricots with sage
Details here: https://www.reluctantgourmet.com/bacon-wrapped-dried-apricots-sage-recipe/ We didn’t have enough sage, so we cut the sage leaves into 2 pieces and then placed one piece of sage on each apricot before wrapping it in 1/3 piece of bacon. We found 375 too low to crisp up the bacon, so we increased to 400. (May 2019) Note: While making… Continue reading Bacon-wrapped dried apricots with sage
Mexican-style oven-roasted chicken with cumin, cayenne, and citrus
Details here: https://cooking.nytimes.com/recipes/6500-chicken-thighs-with-cumin-cayenne-and-citrus We used 2 lb skinless, bone-in chicken thighs that we lightly scored. We reduced the cayenne to ¼ tsp and used the juice of two limes (which probably exceeded 2 Tbsp). We oven-roasted at 425 for 1 hour and served with oven-roasted broccolini, recipe here: http://piglettedc.tumblr.com/post/177041048526/oven-roasted-broccolini-preheat-the-oven-at-450. We used a foil-lined baking sheet and… Continue reading Mexican-style oven-roasted chicken with cumin, cayenne, and citrus
